Indian Spiced Macaroni

Serves: 4
Ingredients
  • 1 quantity of prepared Marinara Sauce (follow the link below to our recipe video)
  • 2 tablespoons oil
  • 1 tablespoon jeeru (whole cumin seeds)
  • 2 cups dry elbow macaroni pasta
  • 1 large onion sliced
  • 1 large bell pepper/capsicum sliced (any color)
  • 3 cloves garlic minced
  • 1-2 tablespoons lal mirchu (cayenne pepper)-depending on your spice preference
  • 1 teaspoon italian seasoning
  • 2 tablespoons grated parmesan cheese
  • 1 ¼ cup water
  • Salt to taste
Instructions
  1. Turn on InstantPot to SAUTE mode
  2. Add oil and cumin and onions
  3. Stir well
  4. Cover with a glass lid and allow to saute for 2-3 minutes
  5. Add in bell peppers, cayenne pepper, garlic, italian seasoning
  6. Cover with a glass lid and allow to saute for 2-3 minutes
  7. Add in pasta
  8. Add in half of the marinara sauce
  9. Add water
  10. Stir well
  11. Close InstantPot lid to lock it
  12. Turn vent on the lid to CLOSE VENT to prevent steam from escaping
  13. Press CANCEL/OFF button on InstantPot to turn off
  14. Set pot to MANUAL mode
  15. Set to HIGH PRESSURE
  16. Set timer to 5 minutes
  17. Once done allow the steam to release naturally (NPR) for 1-2 minutes minimum
  18. Now manually release the steam by opening the vent. The silver prong will drop back into the lid. BE CAREFUL OF THE HOT STEAM
  19. Open the lid
  20. Press CANCEL/OFF button on InstantPot to turn off
  21. Add the parmesan cheese, stir well
  22. Taste the pasta to see if you want to add salt - the marinara we made also had salt in it
  23. Turn InstantPot to SAUTE mode to burn off any liquid you don’t want
  24. If you want more marinara in your pasta, add it now and allow to saute for a few minutes
  25. Your Indian style macaroni is now ready to serve!
Notes
Add any other vegetables you may want.
You can omit the cayenne if you do not eat spice.
You can add different colored bell peppers if you would like

VEGAN VARIATION: Omit the parmesan cheese and this dish is vegan!

NO ONION/NO GARLIC/JAIN VARIATION: Use the No onion/ No garlic variation of the Marinara Sauce and omit the garlic and onions. Use different colored bell peppers and other vegetable
