Ingredients
Instructions
  1. Turn on InstantPot to SAUTE mode and wait until the display reads “HOT”
  2. Add 3.5 cups water, carom seeds and cumin seeds to the pot
  3. Add the green chilies, salt, baking powder and stir well
  4. Simmer for 3-5 mins until the water becomes an amber color
  5. Press “Cancel” on your Instant Pot to turn it off
  6. In a large mixing bowl, add your rice flour
  7. To the flour, slowly add in the water mixture and mix well until you get a loose dough (see video)
  8. Grease three trays with oil
  9. Evenly pour the batter into the trays and set up your trays in the holder (if you do not have this stand, you can use a single tray)
  10. Pour 1.5 cups of water into the InstantPot
  11. Place the stand in the InstantPot (if you are using a single tray, place your tray on the trivet which came with the InstantPot)
  12. Place lid on pot and lock
  13. Close vent on lid to prevent steam from escaping
  14. Set pot to MANUAL mode
  15. Set to HIGH PRESSURE
  16. Set timer to 17 minutes
  17. Manually release steam by opening vent on the lid (BE CAREFUL OF THE HOT STEAM)
  18. Open the lid
  19. Use an oven mitt to remove the tray holder
  20. Carefully remove the trays - they will be HOT
  21. Drizzle oil and sprinkle sesame seeds on top of each tray
  22. Serve the Papdi no Loat using a spatula/spoon and enjoy!
  23. The loat will harden as it sits.
Notes
Serving Suggestion:
Garlic/Cilantro Oil: Warm up some oil for 1-2 minutes and add minced garlic and chopped cilantro. Drizzle this mix over the papdi no loat.
For a kick, sprinkle some pickle masala on the papdi no loat before serving.
