Unicorn Idli
- 1 package of your favorite Rice Idli mix (500 grams)- We used the large Gits package
- 6 baby carrots blended
- ½ cup spinach blended
- ¼ large beet grated
- 4 tablespoons berries blended (we used frozen blueberries and blackberries)
- Oil to grease the idli stand
- 1 cup water for the Instant Pot
- Idli Stand
- In a large mixing bowl, combine the idli mix, water and oil
- Mix well until the mix is smooth and there are no lumps
- Set aside the mix for 10 minutes
- Divide the idli batter into 4 bowls
- In the first bowl, mix in the blended carrots and stir well
- In the second bowl, mix in the blended spinach and stir well
- In the third bowl, mix in the grated beets and stir well
- In the fourth bowl, mix in the blended berries and stir well
- Lightly grease the idli trays with oil
- For Unicorn Idli: Place one small spoonful of each batter in the individual idli opening and then swirl using a toothpick
- For solid colored idli: Fill each idli opening with a separate color
- Once all trays are filled, carefully re-assemble the idli stand
- Pour 1 cup of water into the Instant Pot
- Place the stand in the Instant Pot
- Place lid on pot and lock
- Close vent on lid to prevent steam from escaping
- Set pot to MANUAL/PRESSURE COOK mode
- Set to HIGH PRESSURE
- Set timer to 10 minutes
- Allow Instant Pot to rest for 2 minutes after the timer goes off
- Manually release steam by opening vent on the lid (BE CAREFUL OF THE HOT STEAM)
- Open the lid
- Use an oven mitt to remove the trays
- Once the trays have cooled down enough to handle, remove each idli by running a butter knife along the edges and gently pulling it out
- You are now ready to serve these fun unicorn idlis!
