Fried Rice in the Instant Pot

We won’t lie, our favorite part at the hibachi table is the delicious fried rice and we love being able to enjoy it at home. Unfortunately, you end up using multiple pots and pans and the process ends up being long and tedious. Now, we’re in luck thanks to the Instant Pot! This one pot fried rice is a super hit with our entire family and we’re sure your family will love it too! You can't go wrong with the ease and versatility of this dish.

  1. Turn on the Instant Pot to SAUTE mode
  2. Wait until the display reads “HOT”
  3. Add the butter and sesame oil to the pot
  4. Add the onions and allow to saute for 3 minutes
  5. Add garlic and stir well
  6. Add the beaten eggs
  7. Stir the eggs and allow to cook
  8. Press CANCEL on the Instant Pot
  9. Add in the rice, regular and sweet soy sauce, sriracha, seasoning, peas and carrots and the broth
  10. Stir well to incorporate the ingredients
  11. Make sure nothing is stuck to the bottom of your pot or it will burn
  12. Close and lock the lid on the Instant Pot
  13. Set pot to PRESSURE COOK mode for the Mini and newer IP versions (use MANUAL for older IPs)
  14. Set to HIGH PRESSURE
  15. Set timer to 10 minutes
  16. Turn the vent to sealing to prevent steam from escaping
  17. Once the timer goes off on the Instant Pot, manually release the steam by opening the vent. The silver prong will drop back into the lid. BE CAREFUL OF THE HOT STEAM
  18. Press CANCEL on the Instant Pot
  19. Open the lid and using a utensil, carefully plate your rice on your serving dish or bowl
  20. Garnish with green onion/scallions
Notes
Serving suggestion:
This dish can be served with your favorite Asian dishes, a piece of chicken or fish, or a vegetable stir fry.

Variations:
You can add tofu, fish or other vegetables to make it a complete meal.
You can add additional spices such as ginger and green chilies.

NO ONION/NO GARLIC VARIATION: You can omit the onions and garlic and add bell peppers and ginger instead.

VEGAN VARIATION: Use vegan margarine or omit the butter. You can leave out the eggs and use tofu.
