1. In a mixing bowl, add yogurt, chickpea flour, water, salt, chilies, ginger, white turmeric
  2. Using a hand blender or whisk, mix well
  3. Turn on the Instant Pot to SAUTE mode
  4. Wait until the display reads “HOT”
  5. Add the ghee to the pot
  6. Add the cumin seeds
  7. Allow the seeds to “pop”
  8. Add the curry leaves and close with a glass lid
  9. Allow to cook in the ghee for 1 minute
  10. Pour the yogurt mixture into the Instant Pot
  11. Close and lock the lid on the Instant Pot
  12. Turn the vent to sealing to prevent steam from escaping
  13. Press CANCEL on the Instant Pot
  14. Press SOUP on the Instant Pot
  15. Set timer to 5 minutes
  16. Once the timer goes off, allow the pressure to release naturally (NPR) for 10 minutes
  17. After 10 minutes, manually release the steam by opening the vent
  18. The silver prong will drop back into the lid. BE CAREFUL OF THE HOT STEAM
  19. The silver prong will drop back into the lid once the pressure has released
  20. Press CANCEL on the Instant Pot
  21. Carefully open the lid
  22. Serve in a bowl
  23. Enjoy!

This kadhi can be served with white or brown rice, khichdi or as a side dish with your favorite Gujarati meal.

You can omit the white turmeric if you cannot find it.
Add more or less water depending on how thick you want your kadhi to be.
If you prefer a less sour flavor, you can add a pinch of sugar to the final product.

NO ONION/NO GARLIC VARIATION: This recipe does not contain onions or garlic.

VEGAN VARIATION: Unfortunately, we do not have a vegan variation for this recipe as it is a traditional yogurt based preparation.
