Meal prepping has become so common these days thanks to our busy schedules revolving around work, school, kids and everything else. Some days, you may not have time to cook a hot meal for your family and you don’t want to go the fast food route. This shredded chicken recipe is perfect for those hectic weeknights and weekly lunches. Make this recipe ahead of time and use it in your favorite recipes such as tacos, tostadas, salads, sandwiches and so much more!

  1. Keep the Instant Pot turned off
  2. Place the trivet rack in the steel liner of the Instant Pot
  3. Add the chicken broth to the pot
  4. Place the chicken breasts on top of the trivet using tongs
  5. Sprinkle the taco seasoning all over each chicken breast
  6. Close and lock the lid on the Instant Pot
  7. Turn the vent to sealing to prevent steam from escaping
  8. Press MANUAL on the Instant Pot (high pressure)
  9. Set timer to 12 minutes
  10. Once the timer goes off, turn the vent on top of the lid to venting to release the steam (QR)
  11. Press CANCEL on the Instant Pot
  12. Carefully open the lid
  13. Using clean tongs or forks, remove the cooked chicken breasts onto a clean plate
  14. Using oven mitts, remove the trivet rack from the Instant Pot and place in the sink
  15. Using oven mitts pull out the inner steel pot and pour the broth into a bowl or cup and save
  16. Return the inner steel pot to the Instant Pot
  17. Turn on the Instant Pot to SAUTE mode
  18. Allow all residual liquid to dry off in the pot
  19. Using two forks, pull apart the chicken to completely shred it
  20. Add oil to the pot
  21. Add onions and garlic
  22. Saute for 2 minutes
  23. Add the shredded chicken to the onion mixture
  24. Pour a little bit of the seasoned broth into the chicken mixture to keep it moist
  25. Cook for 2-3 minutes
  26. Serve in your favorite dish or store away for the week

Use this chicken in sandwiches, on top of salads, in your favorite tex-mex dishes and much more.

Variations
You can use any mix of spices to flavor your chicken. Some options: tandoori, harissa, italian/pesto, asian sesame/soy, etc.
