Eggplant Parmesan Casserole in the Instant Pot

Serves: 4
  1. Slice the eggplant and sprinkle with salt and set aside while prepping other ingredients
  2. To the marinara sauce, add the italian seasonings and cayenne pepper and set aside
  3. Turn on the Instant Pot to SAUTE mode
  4. Wait until the display reads “HOT”
  5. Add oil to the pot
  6. Add in the onions and peppers, cover with glass lid and saute for 5-6 mins
  7. Press CANCEL on the Instant Pot
  8. To the cheesecake pan/casserole, add a layer of the marinara sauce
  9. Drain/wipe any excess water off the eggplant
  10. Add sliced eggplant to cover the sauce layer
  11. Add a layer of sauteed onions and peppers
  12. Sprinkle a layer of shredded mozzarella
  13. Sprinkle a layer of parmesan cheese
  14. Add another layer of marinara sauce and continue layering until the pan is full
  15. Gently tent the foil over the cheesecake pan/casserole
  16. Place the trivet in the Instant Pot
  17. Add water
  18. Using the foil sling, gently lower the cheesecake pan/casserole into the Instant Pot
  19. Close and lock the lid on the Instant Pot
  20. Turn the vent to sealing to prevent steam from escaping
  21. Press MANUAL on the Instant Pot (HIGH pressure)
  22. Set timer to 11 minutes
  23. Once the timer goes off allow the pressure to naturally release (NPR) about 3-5 mins
  24. After 3-5 minutes turn the vent on top of the lid to venting to release the steam
  25. The silver prong will drop back into the lid once the pressure has released
  26. Press CANCEL on the Instant Pot
  27. Carefully open the lid
  28. Allow the steam to disperse
  29. Using the foil sling, carefully remove the casserole onto a dish
  30. Serve and Enjoy!
Serving suggestion
Serve with garlic bread or your favorite salad.

You may add additional vegetables like mushrooms and zucchini.

Place the cheesecake pan/casserole dish under the broiler if you want the cheese to be browned.

Make your own marinara sauce

Omit the onions and use a marinara without onions or garlic.

Omit the cheese or use a vegan cheese instead.
