Piri Piri Chicken in the Instant Pot with @amituckeredout

Serves: 4
  1. Keep the Instant Pot turned off
  2. Place the chicken breasts in a plastic zipper bag and pour the Peri Peri sauce over them
  3. Seal the zipper bag
  4. Mix the chicken in the zipper bag to fully coat each piece
  5. Allow to marinade for 30 minutes
  6. Turn on the Instant Pot to SAUTE mode
  7. Add olive oil to the pot AFTER the display reads “HOT”
  8. Place each chicken breast into the pot and allow to brown on one side for 3-4 minutes
  9. Press CANCEL on the Instant Pot
  10. Remove the chicken from the pot and set aside in a dish
  11. Add water to the pot and scrape up any burnt bits
  12. Add rice, salt, Piri Piri seasoning, turmeric, bouillon paste, garlic
  13. Stir to combine all ingredients thoroughly
  14. Add peas, onions and bell pepper-do not stir
  15. Place the chicken breasts on top of the peas, onions and bell peppers
  16. Close and lock the lid on the Instant Pot
  17. Turn the vent to sealing to prevent steam from escaping
  18. Press MANUAL on the Instant Pot (high pressure)
  19. Set timer to 6 minutes
  20. Once the timer goes off, allow the pressure to naturally release (NPR) for 5 mins
  21. After 5 minutes, turn the vent on top of the lid to venting to release any residual steam
  22. Press CANCEL on the Instant Pot
  23. Carefully open the lid
  24. Remove the chicken on to your serving dish
  25. Fluff the rice with a fork and serve with the chicken
  26. Enjoy!
Serving suggestion
For extra spice, drizzle some Peri Peri sauce over the chicken and rice.

Vegetarian: Omit the chicken and add extra vegetables to the rice
