Vegetable Lo Mein in the Instant Pot

Noodles are a great way to get your family to eat veggies. We’ve loaded up this lo mein dish with lots of veggies and sauces to make it extra delicious. The great thing about lo mein is how versatile it is; you can add veggies, tofu, meat and get a great meal out of it.
Serves: 4
  1. Turn on the Instant Pot to SAUTE mode
  2. Add sesame oil to the pot AFTER the display reads “HOT”
  3. Add in the onions, garlic and ginger and saute for 2 mins with the glass lid covering the pot
  4. Press CANCEL on the Instant Pot
  5. Add in the vegetable broth and scrape off any burnt bits on the bottom of the pot
  6. Add the sambal, sriracha, sweet chili, hoisin and soy sauce and stir well
  7. Add the dry noodles into the pot
  8. Mix the noodles to coat with the sauce mixture
  9. Place the broccoli, carrots, bell peppers and mushrooms on top of the noodles-do not stir
  10. Close and lock the lid on the Instant Pot
  11. Turn the vent to sealing to prevent steam from escaping
  12. Press MANUAL on the Instant Pot (high pressure)
  13. Set timer to 5 minutes
  14. Press CANCEL on the Instant Pot
  15. Once the timer goes off, turn the vent on top of the lid to venting to release the pressure
  16. Carefully open the lid
  17. Using tongs, gently mix the noodles and vegetables
  18. If there is too much liquid, burn it off on SAUTE mode
  19. Enjoy!
Serving suggestion
Serve with your favorite Asian main dish or soup.
Add even more vegetables or tofu to use as a main dish.
You may add meat or seafood and adjust the cooking time.

Vegan: This dish is completely vegan.
No onion/no garlic variation: Omit the onions and garlic. Use a variety of sauces which don’t contain garlic (Sriracha, sambal and sweet chili sauce contain garlic). You can add additional vegetables per your preference.
