Handvo in the Instant Pot (Spiced Lentil & Rice Cake)

Hanvdo, another favorite regional Indian snack is one which many people have been intimidated to make the traditional way. In addition to the rice and lentil flour, handvo is filled with vegetables and spices to give it a unique taste and texture. Thanks to this Instant Pot hack, handvo will become a staple in your kitchen for snack time and teatime.

Ingredients
Instructions
  1. In a bowl mix together: handvo mix, dudhi (gourd), carrots, corn, peas, ginger, green chilies, sugar and citric acid
  2. Add 1 cup water
  3. Mix well until all ingredients are completely incorporated
  4. Add the eno/fruit salt to the batter
  5. Mix well until the batter becomes frothy
  6. Add 1 cup water into the Instant Pot
  7. Place the trivet in the Instant Pot
  8. Carefully pour the batter into the greased cheesecake pan/container
  9. Cover the pan with foil
  10. Carefully place the pan with the batter on top of the trivet
  11. Place lid on pot and lock
  12. Close vent on lid to prevent steam from escaping
  13. Set pot to MANUAL mode
  14. Set timer to 30 minutes
  15. Allow pressure to naturally release for 10 minutes after the timer goes off (NPR)
  16. Manually release any residual steam by opening vent on the lid
  17. Carefully remove the foil from the pan
  18. Use a sansi/pakkad/pot handler to remove the pan on to an oven safe tray
  19. Heat your oven to BROIL
  20. Prepare the tempering mix by heating oil in a pot, adding rye (mustard seeds), sesame seeds and dry red chilies and allowing them to pop-cover with a lid to prevent burning yourself
  21. Using a spoon, add the tempering mixture evenly over the handvo
  22. Place the handvo tray on the top rack of your oven, keeping the door slightly open and allow to broil for 5-10 minutes
  23. When you achieve the desired crispness, remove the handvo from the oven
  24. Allow the handvo to cool slightly before handling
  25. Cut the handvo into slices
  26. Serve and Enjoy!!
Notes
Serving suggestion
Serve for breakfast or as a snack with a hot cup of chai or coffee.

Variations
You may add other vegetables such as grated zucchini or methi leaves to the batter.

NO ONION/NO GARLIC VARIATION: There are no onions or garlic in this recipe.

VEGAN VARIATION: Omit the yogurt and this recipe will be vegan.
