This dish is found across many regions across India, each with their own variations. Generally, people tend to shy away from cauliflower due to the lack of flavor and texture. This recipe will have you adding cauliflower to your weekly grocery list thanks to the bold flavors and texture. Not to mention, this is another healthy and vegan dish.
Serves: 4
  • Instant pot
  • Mixing bowl
  • ½ cauliflower cut into large florets
  • 1 large potato cut into ½ inch thick slices
  • ½ large onion chopped
  • 2 roma tomatoes cut into large chunks
  • 2 tablespoons oil
  • 1 teaspoons jeera (cumin seeds)
  • 1 teaspoon rye (mustard seeds)
  • ½ teaspoon hing (asafoetida)
  • 1 teaspoon minced green chilies
  • 1 teaspoon grated ginger
  • ½ teaspoon red chili powder
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • ¼ cup chopped cilantro for garnish (optional)
  • ¼ cup water
  1. Turn on the Instant Pot to SAUTE mode
  2. Wait until the Instant Pot display reads “HOT”
  3. In the mixing bowl, combine cauliflower, potatoes, turmeric, salt, chili powder, ginger, green chilies
  4. Mix well to coat the cauliflower and potatoes
  5. Add oil to the steel pot
  6. Add the rye (mustard seeds) and jeera (cumin seeds) and allow to pop
  7. Optional: Add the hing (asafoetida)
  8. Allow to sizzle for 30 seconds
  9. Add in the chopped onions and mix well
  10. Place the glass lid on the pot and allow to cook for 2-3 minutes
  11. Add the tomatoes to the onion mixture
  12. Place the glass lid on the pot and allow to cook for 2 minutes
  13. Add the cauliflower and potato mixture into the pot
  14. Add ¼ cup water
  15. Stir well to incorporate everything
  16. Close and lock the lid on the Instant Pot
  17. Turn the vent to sealing to prevent steam from escaping
  18. Press CANCEL on the Instant Pot
  19. Press MANUAL on the Instant Pot (LOW pressure)
  20. Set timer to 2 minutes
  21. Once the timer goes off, turn the vent on top of the lid to venting to release the steam (QR)
  22. Press CANCEL on the Instant Pot
  23. Carefully open the lid
  24. Garnish with cilantro
  25. Serve and enjoy!
Serving suggestion
Serve with a side of roti, rice, khadi or daar for a full meal.
