Powerball Energy Bite (Laddoo/Burfi)

On the run and in need of a quick energy boost? We’ve come up with the perfect all natural, gluten free, vegan energy snack for your daily routine. Throw these into your bag or leave them at your desk for that morning or mid-afternoon pick me up! These are also a great alternative to the traditional Indian mithai or sweet for the festival season and they’re perfect for fasting. Whether you roll them into balls or cut them into squares, they make the perfect sweet treat.
Serves: 8
Ingredients
  • Food Processor
  • 2 bowls
  • 1 metal plate at least 1 inch deep
  • Medium sized non-stick pot
  • Silicone or nonstick spatula
  • 1 cup dates chopped and soaked for 30 mins and drained
  • 1 cup dried figs chopped, soaked for 30 mins and drained
  • 2 cups water
  • ½ cup chopped almonds
  • ½ cup chopped cashews
  • ½ cup chopped walnuts
  • ½ cup dried grated coconut
  • 2 tablespoons coconut oil + 1 teaspoon for greasing plate
  • Aluminum foil
Instructions
  1. In a bowl, add chopped dates and soak in 1 cup water for 30 mins
  2. In another bowl, add chopped figs and soak in 1 cup water for 30 mins
  3. Drain figs and dates
  4. Add figs and dates to food processor and process until a smooth paste is formed
  5. Heat nonstick pot on medium low heat
  6. Add coconut oil to pot
  7. Add date and fig mixture to pot
  8. Cook mixture while stirring occasionally for 7 minutes
  9. If making burfi, cover the steel plate with foil and grease with coconut oil and set aside
  10. Add the almonds, cashews and walnuts into the fig and date mixture
  11. Mix well to incorporate all ingredients
  12. Allow to cook for 2 minutes
  13. Remove pot from heat
  14. For the burfi squares, place mixture in the steel plate
  15. Spread the mixture to form a smooth surface with the spatula
  16. Sprinkle grated coconut on top of the burfi
  17. Place the steel plate in the refrigerator for at least 1 hour or until the burfi has set
  18. Once set, cut into diamond shapes and serve
  19. For the powerballs, allow the mixture to cool until you can touch with hands
  20. Form the balls using your hands and roll them into the grated coconut
  21. Keep refrigerated until ready to eat
  22. Enjoy!
