With the festival of Navratri around the corner, many people are preparing to fast over the next nine days. This recipe is the perfect treat while fasting. Sabudana vada, or tapioca fritters are an all-time favorite snack amongst many Indians. Unfortunately, they are typically deep fried, causing you to feel a little guilty about indulging. With our hack, you won’t feel guilty and you won’t miss any of the flavors and textures which you love.

  1. Place trivet in the Instant Pot
  2. Pour ½ cup water in the pot
  3. Place the potatoes on top of the trivet
  4. Close and lock the lid on the Instant Pot
  5. Turn the vent to sealing to prevent steam from escaping
  6. Press CANCEL on the Instant Pot
  7. Press MANUAL/PRESSURE COOK on the Instant Pot (high pressure)
  8. Set timer to 8 minutes
  9. After soaking the tapioca overnight, drain and rinse
  10. In bowl, combine tapioca, peanuts, raisins, coconut, chilies, ginger, salt, lemon juice and sugar
  11. Once the timer goes off, turn the vent on top of the lid to venting to release the steam (QR)
  12. Press CANCEL on the Instant Pot
  13. Carefully open the lid
  14. Remove and peel the potatoes
  15. Mash the potatoes once they are cool enough to handle
  16. Add mashed potatoes to the tapioca mix
  17. Mix well to incorporate all ingredients thoroughly and set aside
  18. Preheat the paniyaram pan on low to medium low heat
  19. Add a drop of oil to each of the openings in the paniyaram pan
  20. Add about a tablespoon of the tapioca mixture into each opening
  21. Allow to cook for 4-5 minutes
  22. Flip the vada (fritters) and allow to cook 3 minutes
  23. Remove the vada (fritters) using a spoon
  24. Serve and enjoy!

Serving suggestion
Serve any time of the day as a snack or as a side dish to your meal.
Serve with tea when guests come over.
