Not THAT Kind of Indian Thanksgiving Stuffing

With holidays such as Thanksgiving and Christmas around the corner, the Instant Pot is going to be our best friend when it comes to prepping meals for our family and friends. This non-traditional wild rice stuffing will add a flavorful twist to your usual holiday menu. We’ve infused this stuffing with lots of spices, herbs and seasonings to add an Indian flavor. This recipe makes a great main meal or side dish to serve with your turkey. We’ll definitely be giving thanks for our Instant Pot this Thanksgiving!
Serves: 6
  1. Turn on the Instant Pot to SAUTE mode
  2. Wait until the Instant Pot display reads “HOT”
  3. Add oil into the steel pot
  4. Add cinnamon stick and whole cumin seeds (jeera)
  5. Allow to heat for 1 minute until the spices become fragrant
  6. Add the onions and mushrooms
  7. Allow to saute for 2 minutes
  8. Add the ginger, garlic, cumin and coriander powder, turmeric, biryani masala and herbs
  9. Stir well
  10. Add the wild rice blend and vegetable broth
  11. Mix well to incorporate all ingredients
  12. Press CANCEL on the Instant Pot
  13. Press MANUAL/PRESSURE COOK on the Instant Pot (HIGH pressure)
  14. Set timer to 25 minutes
  15. Once the timer goes off, allow the steam to naturally release for 10 mins (NR)
  16. After 10 minutes, release the remaining steam by opening the vent
  17. Press CANCEL on the Instant Pot
  18. Carefully open the lid
  19. Gently fluff the rice with a fork
  20. Serve and enjoy!
If you prefer not to have the biryani flavor, you can omit the biryani masala.

Serving suggestion
Serve as a side with your favorite protein such as chicken or turkey.
Add extra veggies to make it a complete meal.
