Thanksgiving Tikka Turkey in the Instant Pot

This quick and easy turkey recipe will keep you sane this Thanksgiving while you’re getting ready for the big meal. With the help of the Instant Pot and using a turkey breast, you’ll have a juicy and flavorful turkey without having to babysit the oven. We’ve put a spicy twist on this turkey to bring in a kick to your usual Thanksgiving menu. This is a great recipe to keep on hand for meal prepping as well. Make the turkey on a Sunday and use the meat for various dishes throughout the week.

Instructions
  1. Turn Instant Pot to SAUTE mode
  2. Add butter to pot
  3. Add apple, onion, carrot
  4. Add chicken broth and stir
  5. In mixing bowl, combine herbs, tikka powder, ginger, garlic and ghee
  6. Add 2 tablespoons water and mix well to form a paste
  7. Set aside tikka spice paste
  8. Using marinade syringe, inject turkey in multiple areas over the breast
  9. Coat turkey with tikka spice paste
  10. Press CANCEL on the Instant Pot
  11. Place the trivet in the Instant Pot on top of the veggies
  12. Place turkey on top of the trivet, breast side down
  13. Place any remaining apples, carrots, onions around the turkey
  14. Close and lock the lid on the Instant Pot
  15. Turn the vent to sealing to prevent steam from escaping
  16. Press MANUAL on the Instant Pot (LOW pressure)
  17. Set timer to 32 minutes
  18. Once the timer goes off, allow the steam to release naturally until the pin drops
  19. Press CANCEL on the Instant Pot
  20. Carefully open the lid
  21. Using oven mitts or paper towels, remove the trivet with the turkey from the Instant Pot
  22. Place in your serving tray
  23. To make gravy:
  24. Using slotted spoon, remove large vegetable chunks left in the drippings in the steel pot
  25. Turn on the Instant Pot to SAUTE mode
  26. In a small bowl, add cornstarch and 3 tablespoons of drippings liquid
  27. Whisk well to remove any lumps
  28. Add cornstarch slurry back into the drippings in the steel pot
  29. Allow to simmer until the gravy thickens to your liking
  30. Slice turkey and serve with gravy
