Now that the weather has cooled down, we are in the mood for a warm and comforting dish that comes together in no time. This paneer tikka pasta fuses the best of Italy and India into a dish that your whole family will crave year round. The perfectly cooked pasta, the soft paneer and the creamy sauce all come together in absolute harmony without any fuss. This is a perfect dish to meal prep with or even cook on a weeknight after work.

  1. Turn on the Instant Pot to SAUTE mode
  2. If using the new pot, set to 3 minutes
  3. Add oil into the pot
  4. Add onions and saute for 3 minutes
  5. Add ginger and garlic and saute for 1 minute
  6. Add 2 tablespoons water to the pot
  7. Scrape off any bits stuck to the bottom of the pot
  8. Turn off saute mode
  9. Add crushed tomatoes, diced onions, bell peppers, paneer, tikka masala, pasta and water
  10. Stir well to incorporate all ingredients
  11. Close and lock the lid on the Instant Pot
  12. Turn the vent to sealing to prevent steam from escaping
  13. Press MANUAL/PRESSURE COOK on the Instant Pot (HIGH pressure)
  14. Set timer to 5 minutes
  15. **For new pot, press Pressure Cook and turn and press the knob to select “Custom”
  16. Set timer to 5 minutes by turning and pressing knob. Press “Start”**
  17. Once the timer goes off, carefully open the vent and allow the steam to release
  18. Press CANCEL on the Instant Pot
  19. Carefully open the lid
  20. Add heavy cream and stir well
  21. Turn on the Instant Pot to SAUTE mode
  22. Allow to simmer for 5 mins or until you reach the desired consistency
  23. Press CANCEL on the Instant Pot
  24. Serve and enjoy!
Notes
You can season with salt and spices accordingly.
