Forbidden Rice Bowl

During the holidays, we tend to overindulge between entertaining family and friends, holiday parties and constantly being on the run. This forbidden rice bowl is the perfect way to eat well, feel guilt free and stay energized during the holiday season. Also, it is a great meal prep idea and doesn’t take any time at all, thanks to multitasking with the new Instant Pot and InstantPot Vortex Air Fryer.

  • Instant pot
  • Instant Pot Vortex Air Fryer
  • Large mixing bowl
  • Wooden spoon or spatula
  • Oven mitt
  • Wide bowls for serving
  • 1 cup Forbidden rice -washed and drained
  • 14 oz Tofu cut into 1 inch cubes and marinated in Asian Marinade*
  • 1 cup cold water
  • 1 medium sweet potato peeled and diced
  • 6-8 Brussels sprouts- washed, drained and sliced in half
  • ½ teaspoon Salt
  • ¾ teaspoon Black pepper
  • 1 tablespoon sesame oil
  • 1 cup cauliflower florets-washed and drained
  • 1 cup broccoli florets- washed and drained
  • Sambal chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  1. Up to 24 hours before, marinate the tofu cubes and refrigerate
  2. In to the Instant Pot, add forbidden rice
  3. Add water
  4. Stir well
  5. Close and lock the lid on the Instant Pot
  6. Press MANUAL/PRESSURE COOK on the Instant Pot (HIGH pressure)
  7. Set timer to 20 minutes
  8. **For new pot, press Pressure Cook and turn and press the knob to select “Custom”
  9. Set timer to 20 minutes by turning and pressing knob. Press “Start”**
  10. Turn the vent to sealing to prevent steam from escaping
  11. While the rice cooks, air fry the vegetables and tofu
  12. Press AirFry and press +/- to set temp to 375 degrees
  13. Press +/- to set time to 15 minutes
  14. Press Start
  15. In a mixing bowl, add broccoli, cauliflower and sweet potatoes
  16. Add salt and pepper
  17. Add sesame oil
  18. Mix well to incorporate all ingredients
  19. Place all of the vegetables in the metal barrel
  20. Twist and lock barrel lid
  21. Open air fryer door
  22. Carefully place barrell inside the air fryer
  23. Close air fryer door
  24. Press “Rotate” on the air fryer
  25. When the Instant Pot timer goes off, allow pressure to naturally release for 10 mins
  26. When the air fryer times is done, carefully remove the barrel using oven mitts
  27. Allow to cool for a few minutes
  28. On the slotted trays, layer marinated tofu so that they do not touch
  29. Place tray into air fryer on center slot
  30. Press AirFry and press +/- to set temp to 375 degrees
  31. Press +/- to set time to 8 minutes (15 mins in the video resulted in extra crunchy tofu)
  32. Press Cancel on the Instant Pot and open lid
  33. Remove inner pot with forbidden rice
  34. Remove tofu tray using oven mitts once air fryer timer goes off
  35. In a bowl, add rice, add vegetables, add tofu and top with asian marinade and sambal (optional)
  36. ENJOY!
You can adjust the seasonings and air fryer timings according to your preference.
