Universal Punjabi Gravy

Serves: 4-6
Ingredients
  • 2 tablespoons oil
  • 1 tablespoon jeera (cumin seeds)
  • 1 tablespoon urad (turmeric powder)
  • 2 teaspoons salt (adjust according to taste)
  • 3 green chilies finely minced
  • 3-4 cloves garlic finely minced
  • 2 tablespoons ginger finely minced
  • 6 roma tomatoes chopped
  • 1 extra large onion roughly chopped
  • ΒΌ bunch cilantro chopped
Instructions
  1. Turn on InstantPot to SAUTE mode
  2. Add oil and allow to heat for 2 minutes- the oil will thin out and disperse to the edges
  3. Add cumin seeds and turmeric powder
  4. Add ginger, garlic, green chilies and stir well
  5. Add onions
  6. Add tomatoes and salt
  7. Mix all ingredients thoroughly
  8. Close InstantPot lid to lock it
  9. Turn vent on the lid to CLOSE VENT to prevent steam from escaping
  10. Press CANCEL/OFF button on InstaPot to turn off
  11. Set pot to MANUAL mode
  12. Set to HIGH PRESSURE
  13. Set timer to 5 minutes
  14. Once done allow the steam to release naturally (NPR) for 2-3 minutes minimum
  15. Now manually release the steam by opening the vent. The silver prong will drop back into the lid. BE CAREFUL OF THE HOT STEAM
  16. Open the lid and add the cilantro and stir well
  17. Press CANCEL/OFF button on InstaPot to turn off
  18. Set pot to SAUTE mode
  19. Cover InstantPot with a glass lid and allow gravy to saute for 2-3 minutes
  20. Press CANCEL/OFF on the Instapot
  21. Allow the gravy to cool before spooning it into the container of your choice
  22. If not using immediately, refrigerate or freeze
Notes
Serving suggestion:
Use this gravy to make your favorite curries: paneer, egg, chicken, vegetable, etc. The possibilities are endless.

Variations:
Use a hand blender or regular blender to make into a smooth gravy if you do not like onion and tomato chunks.
DO NOT blend while HOT..
Be sure that the hand blender NEVER touches the bottom of the InstantPot.

NO ONION/NO GARLIC VARIATION: You can remove the onion and garlic from the recipe and add 1 medium red bell pepper and continue with the other steps. Blend the gravy for a smooth consistency.

VEGAN VARIATION: This recipe is completely vegan!

Mason Jars, Plastic containers, glass containers, freezer proof containers, freezer safe ziploc bags
You can portion out the gravy if you do not think you will use all of it at once.
